Menu Suggestions

This is a listing of suggested menus for camping trips. Although it is sometimes difficult to make sure that the boys are eating healthy, I hope that these suggestions will encourage the planning of healthy meals on numerous camping trips. Please keep in mind that quantities may need to be adjusted up for older scouts who tend to eat more than the younger scouts. Substitutions can be allowed depending on individual tastes, time of year and availability of fresh fruit. There are several choices for BREAKFAST, LUNCH, or SUPPER.

    1. Wash Hands
    2. Fry sausage links on griddle. Wipe clean with paper towel.
    3. For French toast mix, put eggs in to medium pot, beat with a fork until they are thoroughly mixed. Add 1 cup of milk for each 6 eggs, and mix.
    4. Grease the griddle with a paper towel and place over medium heat on two burners. DIP (do not soak) the slices of bread in the batter and fry them on both sides until golden brown. Watch French toast carefully as it burns easily. Grease the griddle before each batch of toast with butter.
    5. Mix juice in pitcher.
    6. Set table and then set out food.

    PREPARATION:

    1. Wash hands
    2. Fry sausage on griddle
    3. Dice tomatoes
    4. Coat the griddle with oil and fry the hash browns until golden brown. It generally works better if you break them up.
    5. Mix eggs in medium pot. Add a small amount of milk to the beaten eggs. Scramble on the griddle.
    6. Mix juice in pitcher.
    7. Set table and then set out food.
    8. Put dish water on to heat.
    9. Make pockets by mixing the eggs, chopped sausage and tomatoes, stuff it into the pocket and then top it with cheese.

    PREPARATION:

    1. Wash hands.
    2. Coat the griddle with a thin layer of oil. Fry the link sausage on the griddle and wrap cooked sausage in foil to keep warm.
    3. Wipe griddle clean with paper towel.
    4. Mix the pancake mix according to the directions on the back.
    5. Preheat the griddle until drops of water sprinkled on it will dance around violently. Grease the griddle with butter and pour the batter onto the grill. When the bubbles start to break, flip the pancakes. Grease the griddle before each batch.
    6. Mix juice in pitcher.
    7. Set table and then set out food.

    1. Wash hands.
    2. Heat water in large pot to boiling.
    3. Crack eggs into zip-loc bag. Squeeze to scramble and add small amount of milk. Mix in bacon bits and cheese. Close bag and squeeze bag to mix. Carefully drop bag into pot of boiling water. Cook until eggs are completely done, turning bag with tongs if needed. Use tongs to remove bag from water. Open bag and pour Omelet into plate.
    4. Mix juice in pitcher.
    5. Set table and then set out food.

    2. Boil water in the large pot and cocoa pot.
    3. Use the large pot and the ladle for the Oatmeal and use the cocoa pot for the Hot Cocoa. If you are careful you will be able to place the pots back in the patrol box for the next meal. So don't dirty them.
    4. Set the table and set out the food.
    5. Place all paper and plastic goods in the trash can.

    1. Wash Hands
    2. Place eggs in small pot and cover with water. Boil for ten minutes until hard boiled. Rinse in cold water, peel and chop up into small pieces.
    3. Prepare the chicken salad. Drain water off chicken. Mix the cans of chicken with the pickle relish and chopped egg and celery. Add one tablespoon of lemon juice and some pepper. Mix in 1 cup of mayonnaise for every 12oz. of chicken.
    4. Mix fruit drink according to the directions on the package.
    5. Put the dish water on to heat.

    2. Brown hamburger meat and drain grease.
    3. Heat beans in pot.
    4. Wash and cut up tomatoes, lettuce and onions into small pieces.
    5. Mix fruit drink according to the directions on the package.
    6. Put dish water on to heat.
    7. Set table and then set out food. Serve by placing tortia chips on a plate and to with meat, beans and cheese. Sprinkle with onions, tomatoes, and lettuce. Add taco sauce as desired.

    SUPER - S1

    1. Mix brownie mix in medium pot according to the directions on the package. Preheat Dutch oven over high heat. Place three small stones on the bottom of the Dutch oven in a triangle about two inches away from the edge. Grease the INSIDE BOTTOM and INSIDE SIDES of the small frying pan. Spoon the Brownie mix into the pan and spread evenly. Bake in oven over high heat for approximately 40 minutes. It will depend on your stove. Check occasionally to see if done. When a knife can be placed into the thickest part of the brownie comes out clean, they are ready.
    2. Place 2 qts. of water in large pot for every lb. of spaghetti. Add 1 teaspoon of salt. Place on high heat and bring to a boil. Add the spaghetti gradually and boil 10-12 minutesuntil tender. Drain off water. Stir in butter and serve.
    3. Brown the hamburger, in the large frying pan, and drain off the GREASE.
    4. Dump sauce into pan with the beef and warm over medium heat stirring occasionally. Pour over individual servings of spaghetti.
    5. Heat bread if desired.
    6. Mix fruit drink according to the directions on the package.

    SUPPER - S2

    PREPARATION:

    1. Wash hands.
    2. Make the pasta salad in the large pot according to the directions on the box. After this is done put it in the large frying pan. Then place it in the cooler so it will be chilled.
    3. Add a thin layer of oil to the Dutch oven and place on high heat. Wash the chicken breasts and fry until are white all the way through.
    4. Prepare the stuffing in the large pot by looking at the directions on the back of the box.
    5. Drain the GREASE out of the Dutch oven and place on low heat. Place the cooked chicken breasts into the oven and add tomato sauce and Italian seasoning to taste. Place the lid on the oven and heat until the sauce is warm. Then add the mozzarella cheese and heat until the cheese is melted.
    6. Mix fruit drink according to the directions on the package.
    7. Put dish water on the heat.
    8. Set table and then set out food.

    SUPPER - S3

    1. Wash hands.
    2. Place beans in the medium pot and heat over low heat.
    3. Prepare rice in the cocoa pot by following the directions on the package.
    4. Slice onions and peppers and grill on the griddle with a small amount of oil.
    5. Shred lettuce and chop tomatoes into small pieces.
    6. Slice the chicken breasts into strips and cook on griddle with a small amount of oil.
    7. Mix the fruit drink according to the directions on the package.
    8. Put dish water on to heat.
    9. Set table and then set out the food.
    10. Serve Fajitas by placing chicken strips on the tortia. Top with peppers, onions, lettuce, tomato, and cheese. Add sour cream salsa, and pinto beans to add taste. Roll up and eat.

    SUPPER - S4

    PREPARATION:

    1. Wash hands.
    2. Brown the hamburger meat, in the large frying pan, drain the GREASE.
    3. Open the tops of the ABC soup.
    4. Pour the hamburger meat and the ABC soup in the large pot and cook over medium heat. Stir, it will be done when bubbles come to the top.
    5. Make the Fruit Drink according to the directions on the package.
    6. Set the table and set out the food.
    7. Set the dish water on to heat.
